Gemini Midnight Cake

with Stardust Frosting

adapted from the recipe provided by 'Savage Pizza' restaurant in Lil 5 Points, Atlanta, GA

Ingredients :
CakeFrosting
2 cups flour1 cup whipping cream
2 cups sugardash of salt
1 cup powdered cocoarounded 1/3 cup of flour, sifted
2 tsp. baking soda1 cup butter, softened
1 tsp. baking powder1 cup powdered sugar, sifted
1/2 tsp. salt2 tsp. vanilla
1 cup milk2 tsp. black food colouring
2 tsp. vanilla glittered sprinkles to liking
2 eggs, lightly beaten  
1 cup black coffee  
1/2 cup vegetable oil 


Preparation:

Cake:
Preheat oven to 350. Grease and Flour 2 9" round baking pans, set aside. Brew black coffee to liking, dissolve cocoa in 1 cup black coffee. Add milk to cool and set aside. Mix dry ingredients in large mixing bowl. Stir in oil and beaten eggs. Mix coffee-cocoa-milk mixture slowly into batter until it reaches a rich, smooth consistency. Pour into 2 9" round baking pans. Bake 25-35 minutes, checking the cake consistency in 5 minute increments after 20 mins to avoiud scorching, as this is a light and moist cake that can easily burned. Removed when ready. Let stand 5 minutes in baking pans, then gently remove to a wire rack. DO NOT FORCE THEM OUT OF PANS. If cake is sticking to baking pans, let stand a few more minute to cool to allow an easy, gentle removal and to avoid crumbling the cakes.

Frosting:
Mix cream, flour and salt until lumps are dissolved. Cook over medium heat in a large sauce pan, while stirring continually with a wood spoon. Cook this mixture until thickened and it forms a paste-like-ball which pulls away from the sides of the pan easily. Allow the paste mixture to cool.
After the paste is cooled, whip. Add the butter and whip together. Add sugar slowly while continuing to whip. Add the vanilla & food colouring and beat well. If mixture is too runny for liking, you can dust mixture with extra powdered sugar to thicken to desired consistency.
This is a good frosting for those who don't like too sweet frosting. In hot, humid weather this frosting tends to be too soft when beating. It will require refrigeration. 

Assembly:
Let cake cool *FULLY* before frosting! I know a lot of people get impatient, myself included ;P, but this is one cake that will be ruined if you don't have some patience and let it COMPLETELY cool, as the frosting will just melt back into cream, literally, and turn the cakes soggy. Evenly frost the top of one cake generously, carefully balance second cake atop, and frost whole cake to liking. Dust finished cake with crystalized, or sparkled white sprinkles for a star-dust affect against the black frosting/cake. If you want to get really into it, you can even pick up some white star-shaped candy flakes to add in defined stars to the stardust cake. Refridgerate until serving.

*Crystalized sprinkles, sparkle sprinkles, and novelty candy flakes available in the baking aisle of mostly all grocery and party stores. Much more decorative ones can be found at bridal shops.
