Tortellini with mushrooms and cream



Ingredients for 4 servings:

<img:stuff/colorcandybullet.gif> 1 Pack tortellini stuffed with cheese or prosciutto
<img:stuff/colorcandybullet.gif> 1 big spoonful of butter
<img:stuff/colorcandybullet.gif> 1 cup of mushrooms (fresh or canned)
<img:stuff/colorcandybullet.gif> 1/2 cup wine (I use red for stronger taste)
<img:stuff/colorcandybullet.gif> 250 ml of cream
<img:stuff/colorcandybullet.gif> Parmesan cheese or other hard cheese of your liking
<img:stuff/colorcandybullet.gif> salt
<img:stuff/colorcandybullet.gif> Pepper (preferably freshly ground)


<img:stuff/colorcandybullet.gif> Boil the tortellini in a pot, following the instructions on the pack. When they're done, drain the water and keep them warm.
<img:stuff/colorcandybullet.gif> Heat the butter in a wide pan, drain the mushrooms (if canned) and Sauté them until they "drink" their fluids.
<img:stuff/colorcandybullet.gif> Pour the wine in the pan and wait6 for some minutes so as the alcohol has evaporated. Add the cream, 1-2 spoonfulls of the cheese, salt& pepper to your liking and let the sauce simmer until it thickens.
<img:stuff/colorcandybullet.gif> Put the tortellini in the panful and stir until their all covered with the sauce. Be careful not to break them.
<img:stuff/colorcandybullet.gif> It is served hot in bowls or deep dishes and you can top them with more cheese if you want!
