Potato Bake
Is also called scalloped potatos
Ingredients
4 Potatos
1 Sweet potato
1/2 cup of finely chopped eschallots
3 bacon rashers - cooked and chooped into small pieces.
1 - 2 cups of grated cheese
1 cup of thickened cream
1 teaspoon of powdered chicken or vegetable stock
Instructions
1. Pre - heat oven to 200 degrees Celcius, then peel potatos and sweet potato before slicing, leaving them not too thick or thin. Put the potato and sweet potato into a saucepan of water and cook until they are just beginning to go a little soft.
2. Now arrange a layer of the potato and sweet potato, top with a little of the bacon, a little of the eschallots, and a thin sprinkling of cheese. Repeat.
3. Mix the powdered stock into the cream and pour over the top of the potato layers, then top with a sprinkling of cheese.
4. Put into the oven for about 40 mins, or the potato is tender and the top is golden brown.
NOTE: I personally like to let the potato bake sit for up to 30 mins before serving, it gives the cream mixture a chance to thicken. If covered with foil, the potato bake will stay warm for quite a while.
Also you can add anything you want to the potato bake, like onions and garlic. anything goes folks, be creative.
This is how much I use, for two adults and two children, we usually have a little left over afterwards.
