Cooking with kids-by [Kileaiya]

I know a lot of Elftowners have children, and it's always great to have a way to spend time with them and have fun at the same time. So I thought that I'd give you a great kid-friendly recipe each issue so you and your children can spend some quality time together. This recipe is great for an on-the-go snack and your kids will love making it themselves with a little help from you. Now on to the recipe!


Under the Seafood Pasta Salad
*Note:adult needed for parts of recipe*

What you’ll need:
1 ½ (8 ounce) packages tri-color pasta
3 stalks celery
½ pound imitation or real crabmeat (tuna can be substituted or added in addition)
½ pound boiled shrimp
1 cup frozen green peas
1 cup mayonnaise
1 ½ tablespoons white sugar
2 tablespoons white vinegar
3 tablespoons milk
1 teaspoon salt
1/4 teaspoon ground black pepper


Adult bring large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes or until pasta is al dente; rinse under water until cool and drain.
While pasta is cooking chop celery and crabmeat (this can be done by older children under strict adult supervision). The shrimp can also be cut into smaller pieces. If desired, run hot water over peas to defrost.
In large bowl, let the children whisk together the mayonnaise, sugar, vinegar, milk, salt, and pepper. Add the pasta, celery, crabmeat, and shrimp and stir until evenly coated. Adjust the salt, sugar or mayonnaise to suit your taste. Chill several hours before serving.
