Tilapia with Spicy Rub

4 tilapia fillets
Coarse salt
Ground pepper
1 teaspon cumin
1/2 teaspoon paprika
2 tablespoons extra virgin olive oil
1/2 lime
1/2 medium red onion, chopped
1 jalapeno, seed and finely chopped
3 cloves of garlic
Chopped, fresh cilantro

Season fish with salt, pepper, cumin, and paprika. Take one clove of the garlic (finely chopped) and rub it into the fish. Heat a nonstick skillet over medium-high heat. Add 1 tablespoon of olive oil. Saute fish for approximately 3 minutes on each side or until fish is flaky and an opaque white color. Remove fish to warm serving platter and squeeze the juice of half of a lime over it.

In the same skillet, add 1 tablespoon of the olive oil. Add the onion, jalapeno, and 2 cloves of garlic. Saute for approximately 5 minutes. Season with a little salt and pepper and serve over the tilapia.
