Zucchini Bread (Two Loaves)

This is one of my favorite recipes that my mother makes every fall when my father's garden is just about through for the season. For anyone who has a garden, you may already know this tasty treat by heart (or have a mother who makes the best). Well my mother's is the best. In fact, this is her recipe. Thanks, Mom!
3 eggs
2 cups sugar
1 cup oil
3 tsp. vanilla
2 cups grated zucchini un-peeled*
3 tsp. Cinnamon
1 tsp. Salt
¼ tsp. Baking powder
2 tsp. Baking soda
3 cups flour
1 cup chopped walnuts (optional)
Beat eggs until light and fluffy. Add sugar, oil, and zucchini. Add dry ingredients to creamed mixture. Fold in nuts.
Pour into 2 9”x 5” well greased loaf pans. Bake at 350° F for about 50 minutes to and hour.
*Zucchini may be grated in a blender by adding water and straining.
