I figure that demon hunting can be messy, especially when you are first training in it. I totally see Mai jumping head first into a demon battle before Shyl told her the specifics and getting covered in gore. He himself probably did something stupid like that when he was first being trained, so imagine washing that out of wings AND hair.
Notice his cloak is missing. He gave it to her so she could strip off her clothes to wash them before climbing into the water herself. Then he remained to stand watch to make sure she wasnt bothered. He may look irritated but he isnt. This was a learning experience for his apprentice and nothing more. After a fashion I can totally see Shyl thinking of her in the same manner an elder brother thinks of a younger sibling in his care. Shyl called only a few friend in his days before the storyline begins and Mai was one of them.
