Soutzoukakia

Soutzoukakia Smyrneika: large meatballs with cumin, cinnamon and garlic and served in a tomato sauce.

Ingredients for ~10 soutzoukakia (Smyrna meatballs):

For the meatballs:
<img:stuff/colorcandybullet.gif> 1/2 of minced meat of your liking (I use pork/beef mix)
<img:stuff/colorcandybullet.gif> 1 onion (minced)
<img:stuff/colorcandybullet.gif> 1 clove of garlic (minced)
<img:stuff/colorcandybullet.gif> 1/2 cup of breadcrumb
<img:stuff/colorcandybullet.gif> half a teaspoon of cumin
<img:stuff/colorcandybullet.gif> half a teaspoon of cinnamon
<img:stuff/colorcandybullet.gif> salt
<img:stuff/colorcandybullet.gif> Pepper (preferably freshly ground)

For the Sauce:
<img:stuff/colorcandybullet.gif> 1 cup of tomato pulp or 2-3 fresh tomatoes (ground)
<img:stuff/colorcandybullet.gif> 1/2 onion (minced)
<img:stuff/colorcandybullet.gif> 1 clove of garlic (minced)
<img:stuff/colorcandybullet.gif> 1/2 glass of red wine
<img:stuff/colorcandybullet.gif> Some cumin
<img:stuff/colorcandybullet.gif> salt
<img:stuff/colorcandybullet.gif> Pepper (preferably freshly ground)
<img:stuff/colorcandybullet.gif> 1 teaspoon of sugar
<img:stuff/colorcandybullet.gif> Parsley

<img:stuff/colorcandybullet.gif> Add all the ingredients for the meatballs in a bowl and mold until they thoroughly blend. If you want them to blend really nicely, use your hands. You'll get dirty but the result is worth it :P

<img:stuff/colorcandybullet.gif> Fry them (with olive oil) until they're nicely brown on every side and place them on a plate where you should have put some paper to gather the most of the oil

<img:stuff/colorcandybullet.gif> In a pan or pot lightly chaute the onion and garlic and pour the wine over them.
<img:stuff/colorcandybullet.gif> Add the rest of the ingredients in and let it simmer until it thickens.

<img:stuff/colorcandybullet.gif> Add the meatballs in the sauce and leave it simmering for ~20 minutes till they soften a bit. If your sauce is too thick, add some hot water in.
